Recipe Summary
A versatile sauce that can be cooked in large amounts and bottled or frozen. Great with pasta or as a basis for other dishesIngredients :
- 1 kilo of ripe tomatoes, chopped
- 6 cloves of garlic peeled
- 1 tsp salt
- 1 tsp black pepper
- good handful of fresh basil roughly chopped
- good handful of fresh parsley roughly chopped
- 1/2 glass red wine
- 1 tblsp red wine vinegar
- 2 tbls sugar
- 1 tsp paprika
Directions / Instructions :
- Put all ingredients into a pan and bring to the boil
- Turn down heat to simmer and cook for 1.5-2.0 hours stirring occasionally
- When cool, strain through a seive
- Freeze in tubs or sealed bags and desfrost before use
- To bottle, sterilise and heat jars, pour in sauce to top while jar is still hot and seal with a lid
- Use this sauce as a basic sauce for pasta, add mushrooms or meat, chilli peppers, bacon or ham, or use with chicken and vegetables for a casserole, its so versatile
Quick Notes :
