Recipe Summary

An impressive supper dish quick to prepare and cook

Ingredients :

  • 8 chicken joints on the bone, you could use a whole chicken and cut into joints yourself
  • 1 tblsp oil
  • 1 glass (300mls) white wine
  • juice of one large orange or 150 ml
  • juice of 1 large or 2 small lemons or 150 ml
  • 200 ml runny honey
  • salt and pepper

Directions / Instructions :

  1. Heat oil in a large fry pan
  2. sprinkle chicken with salt and pepper
  3. add chicken joints to pan and cook turning frequently until brown all over, remove from pan and place in a casserole dish, cover with a lid and place in a moderate oven 160c for 15 minutes
  4. Take chicken from oven, pour off any juices into the fry pan
  5. add white wine to fry pan and bring to boil, cook 1 minute
  6. add orange juice, lemon juice and honey to wine, bring to boil then simmer for 2 minutes, the sauce should thicken into a syrupy glaze
  7. pour glaze over chicken in casserole and turn chicken so it is evenly coated
  8. Place casserole in oven uncovered for a further 10-15 minutes until chicken is a golden brown and cooked through
  9. Serve with boiled rice
