Recipe Summary

A traditional dish often served in Spain and Mexico with plain rice or fresh bread

Ingredients :

  • 4 Chicken breasts, chopped into cubes ot use chicken legs or thighs
  • 1 can of chopped tomatoes with juice
  • 1 red pepper diced
  • 1 green pepper diced
  • 1 yellow pepper diced
  • 2 cloves garlic crushed
  • 100 grams mushrooms sliced
  • 1 tblsp oil
  • 1 tbls tomato paste
  • 200 grams tomatoes chopped
  • salt & pepper
  • 1 tsp basil finely chopped
  • 1/2 tsp hot paprika pepper
  • 1 onion finely chopped
  • 50 grams chorizo sausage sliced
  • small handful of roughly choped parsley

Directions / Instructions :

  1. Heat the oil in a pan on medium heat and add chicken
  2. stir for a few minutes until browned
  3. Remove from pan and place in a casserole dish
  4. Add garlic, onions and peppers to pan and cook for a few minutes then add to the chicken
  5. Add mushrooms to pan and cook for a few minutes then add to casserole with other ingredients
  6. finally add the chopped tomatoes to the pan and stir for a few minutes then add the tinned tomatoes, tomato paste, basil, salt & pepper & paprika pepper, mix well than add to the casserole
  7. Add the sliced chorizo sausage to the casserole, stir well to mix everything then cover with a lid
  8. Place in the oven for about 1 hour on 150c
  9. Serve with the parsley sprinkled on top with rice, pasta or just bread and salad
