Recipe Summary

A delicious and easy to make Italian inspired warm dip to serve with garlic bread or crudites

Ingredients :

  • 2 x large portabellini mushrooms, chopped
  • 150 grams of soft full fat cheese such as Philidelphia
  • 2 cloves of garlic, chopped
  • 35 grams of butter
  • 1 x tbls of natural yoghurt
  • 2 x tbl of double cream
  • salt and pepper
  • 25 grams of any hard cheese, cheddar, stilton, goats cheese or a mixture, grated or finely chopped
  • a sprig of fresh rosemary or a good pinch of dried

Directions / Instructions :

  1. Melt butter in a pan and gently fry the garlic until soft and then add the mushrooms, cook gently until soft without browning, lower heat and cook gently for about 10 minutes until everything is amalgamated and cooked down.
  2. Add the soft cheese with the salt and pepper and rosemary, stir until the cheese has melted and cook gently for 2 minutes, stir in the yoghurt and cream and continue to gently cook without boiling for another minute, remove from heat and stir in the hard cheese, stir until melted and the sauce has thickened.
  3. Serve warm with itallian breads and fresh salads

Variations :

You can vary with this with the different flavours of cheeses available
