Ingredients

  • Makes 12-20 depending on size of cake cases
    For the cakes: 100 grams self raising flour (or plain flour and 1 tsp of baking powder) 25 grams cocoa powder 125 grams white sugar 125 grams soft butter (or soft margerine) 2 x large fresh eggs For the topping: 50 grams soft butter 100 grams fine icing sugar a little cold milk 12-20 mini marshmallows You will also need: 12 large or 20 smaller cake cases and a bun tin or tray to sit them in

Instructions

  1. For the cakes: sieve together the flour and cocoa and set aside, In a food mixer, beat togther the butter and sugar until light and fluffy, about 3-4 minutes Add the eggs, one at a time with 1 tablespoon of the flour and cocoa (to prevent curdling) and beat after each until well combined. Fold in the remianing flour with a metal spoon until well mixed. Half fill each cake case with the mixture Bake in the centre of a pre-heated oven at 160c for 8-10 minutes Allow to cool before decorating
For the topping: Use a food mixer or a wooden spoon to, Beat together the butter and icing sugar for several minutes until light and frothy, if the mixture is too stiff, add a little cold milk, if it’s too soft add more icing sugar, you need a consistency that will hold it’s shape. Place in the fridge for 15-20 minutes When cakes are cold, top each with a good spoonful of the topping and add a marshmallow on top.

These are great for afternoon tea or just for a tempting bite any time of the day!

Variations

Whatever you like, add any flavourings you like to the base sponge and the topping, orange, coffee, or make them without the cocoa powder (increase the flour so the ratio is the same) and add vanilla, lemon, sultanas, nuts. The possibilties are endless. Try the base sponge with some chocolate chips and then top with grated chocolate.
