Recipe Summary
A meat lovers feast, although a casserole, this is actually cooked on the hob and is easy enough for a beginnerIngredients :
- 300 grams lambs liver, thinly sliced
- 4 pork sausages, good quality ones are best
- 4 thickly sliced bacon rashers
- 1 onion
- 1 tblsp flour
- Fresh herbs (parsley, rosemary, basil, oregano) chopped
- 1 tblsp oil
- 1 can chopped tomatoes
- 1/4 pint meat stock
- Salt & Pepper
Directions / Instructions :
- Coat the liver in flour seasoned with salt & pepper
- Cut bacon rashers into 4
- Heat oil in a large pan and fry the sausages for a few minutes until browned, set a side
- Add bacon to pan and cook a few minutes, remove and put with sausages,
- Fry onions in the pan juices for a few minutes until softened
- Move onions to edges of pan while you fry the liver on all sides until browned, leave in the pan with onions
- Add stock to the pan with the chopped herbs and bring to boil, place the bacon back in the pan
- Cut sausages into 4 and add back to pan, give everything a good stir, bring to boil, add tomatoes and simmer for 15-20 minutes until sausages are cooked
- The sauce will have thickened and become meaty
- Serve with mashed potatoes-delicious!
Variations :
