Ingredients

  • 500 grams minced lamb meat 1 x Tblsp fresh thyme chopped 1 x tblsp fresh flat leaf parsley, chopped 1 x onion, very finely chopped 1 x green chilli pepper, finely chopped, 1/2 tsp of sweet paprika 1/4 tsp hot paprika or chilli powder 2 x small cloves of garlic, finely chopped or minced 1/4 tsp salt Ground black pepper Oil

Instructions

  1. Combine all ingredients thoroughly in a large bowl, Cover and stand in the fidge for 2-3 hours or even overnight if possible, After standing, mix ingredients again, Place a little oil on your hands and rub together, this is to prevent the mix sticking to your hands while you are shaping it, Take a dessertspoon of the mix for each meatball and shape into a ball in the palm of your hands, Flatten sightly and grill on a hot griddle for about 4-5 minutes each side. These are very versatile and can be served in a number of ways- just as they are with some rice or chips and salad, in a sandwhich, or cook them in a tomatoe sauce in the oven and then top with some grated cheese

Quick Notes

Make a quick tomatoe sauce with a can of chopped tomatoes, a tsp of tomatoe paste, some salt & pepper, some herbs of your choice and somme garlic, place in a pan and cook over a medium heat until thickened, pour over the uncooked meatballs in an ovenproof dish and cook uncovered for 10 minutes in a hot oven, top with grated cheese and serve with pasta, rice or noodles

Variations

You can use any meat you have as long as its not too fatty or the balls will shrink too much and fall apart. Mix some hard cheese into the mix before for a tasty change
