- 4 skinless chicken breasts
- 4 slices of smoked bacon or ham
- 4 slices of yellow tasty cheese
- 4 pineapple rings -fresh or tinned
- 1 egg beaten
- 100 grams breadcrumbs
- 1 tblsp flour
- salt and pepper
- 1/2 tsp paprika
Directions / Instructions :
- Using a rolling pin or meat hammer flatten the chicken breast until they are quite thin and lay flat on a piece of greasproof paper
- lay a slice of bacon on the chicken breast, folowed by a slice of cheese
- Starting at the long end of each breast, roll up the chicken, enclosing the bacon and cheese, secure the roll with a cocktail stick
- mix the flour with the paprika, salt and pepper on a piece of paper or a tray
- on another peice of paper or tray spread the breadcrumbs
- Roll each of the chicken rolls in the flour, then the beaten egg, then the breadcrumbs ensuring each is evenly and thickly coated,
- Shallow fry, place some oil in a pan on a medium heat and gently place the rolls into the oil, cook for about 10-15 minutes turning regularly or
- Oven bake, place the rolls on a baking tray and place in a hot oven 180c for around 20 minutes, until chicken is cooked
