Ingredients

  • 400 grams of mushrooms, cleaned and sliced 6 or 7 spring onions, peeled and finely chopped 1 x clove of garlic, crushed 1 x glass of white wine 25 grams of butter 1 x tblsp of olive oil 150ml of cream, thick is best 1 x tblsp of natural yoghurt freshly ground black pepper 100 grams strong yellow cheese salt to taste 1 x tblsp fresh parsley

Instructions

  1. Cheesy Creamed MushroomsMelt the butter and olive oil in a saucepan Fry the onions and garlic over a low heat until softened Add the mushrooms and turn a few times Turn up the heat and cook the mushrooms turning and tossing all the time until they start to brown Add the white wine and boil for a few minuts until reduced by half, Lower the heat and add the cream, continue cooking without boiling for a few minutes until thickened slightly. Remove from the heat Add the cheese and stir until melted through, then add the parsley and the yoghurt and stir through until combined Serve in a ramekin with bread and butter as a starter, or on toast for lunch, or even with rice or pasta as a main course

Variations

Leave out the cheese and add extra garlic Add bacon, salami, ham or chicken for a more substantial main course
