Recipe Summary

This is a simple dish, easy to cook, nutritious and filling it is great on its own as a main supper dish. It is popular in Bulgaria and Australia

Ingredients :

  • 1 medium sized firm cabbage (approx 1 kilo)
  • 1 large onion, sliced
  • 200 grams of lean bacon chopped, smoked is best, you can use sliced or a joint of bacon or lardons
  • 1/2 pint of boiling water
  • 1/4 tsp salt
  • 1/2 tsp black pepper
  • 1 tblsp red wine vinegar (optional)
  • 1 tblsp olive oil

Directions / Instructions :

  1. Cut the cabbage into quarters and remove the hard core, finely slice or shred
  2. Place boiling water in a suitable size pan, add the cabbage and half the salt, bring back to the boil and cook for 2 minutes, remove from the heat and drain set cabbage aside.
  3. In a large frying pan, heat the oil until hot, add bacon and fry 1 minute then add the onion, keep the heat high and keep turning the bacon and onion until the onion is lightly browned but not burning
  4. Add the cooked cabbage to the pan of onions and bacon, lower the heat and keep turning all together until well mixed, add the rest of the salt, some pepper and the vinegar if using, continue cooking until the cabbage is cooked but not too soft
  5. Serve immediately with some fresh bread and yogurt or tomato sauce

Variations :

For a more substantial meal add some mushrooms and other vegetable, green beans, courgettes etc. You can also use different meats, cooked ham or chicken or even salami, just remember to use less salt if using strong meats and more if using light meat such as chicken

Quick Notes :

Some types of cabbage may take longer to cook than others, generally it is better to use the white firm cabbages these have more flavour in a dish like this and remain crispy, if you use greener cabbage you may have to reduce the cooking time
